Audits and additional charges for FOPs: my rights

I am an entrepreneur and I am a bit worried about the frequent audits and large additional charges from the tax authorities, which are widely discussed now. If, after an audit, I am assessed additional taxes or fines, but I disagree with them, how and within what timeframe can I appeal these amounts? What happens if I disagree with the additional assessment and do not pay it immediately?
